Holly White is a vegan chef and author. Collaborations include working in Ireland’s 5 Star Merrion Hotel alongside head chef Ed Cooney to create a dedicated vegan menu throughout the hotel which was written up by Vogue.com and National Geographic as one of the best Vegan offerings in Dublin and Irish designer Niamh O’Neill on a capsule clothing collection made using sustainable materials and practices. Since February 2023 she’s the vegan ambassador for Compass Ireland working alongside their chefs to help develop an even more varied plant-based food offerings.
